馬鈴薯發芽在癒傷一或二星期,或再加以冷藏十天,結果冷藏者伽瑪射線5 Krad即可抑制發芽,未冷藏者7.5Krad 才可抑制發芽,水分變化和鮮重之減小,照射者都比未照者小。還原糖和蔗糖經伽瑪射線照射後皆提高,冷藏亦可增加蔗糖和還原糖之量,但伽瑪射線照射後其還原糖之含量卻比未照射者低。澱粉水解□之活性,伽瑪射照後沒什麼變化,但澱粉磷酸酯化□其活性卻提高了。
