Abstract
EPNP是一種受質類似物的抑制劑。它可與酵素的經酸基形成醣類。受質可以防止凝乳醃的自身分解及失性作用。牛凝乳酵素與黴凝乳酵素與EPNP作用的活化能，分別為1256cal╱mole。、13104cal╱mole。碘亦可抑制醃的活性。
